Our beef shanks are cross-cut with the bone in. These are wonderful braised to make Osso Bucco, a definite treat. Cook low and slow in the slow cooker, and can make outstanding, nutrient rich, high protein, bone broth. Due to the bone-in, there may a few ice crystals on these when you receive the package. This will not affect the shank and will be just fine.
